Image7I’m Jessica.  I live in big city Chicago, but I was born and raised in a small farm town in Ohio.  I’m a writer, a food-lover, a beer-drinker, a dog-owner, and I believe the best and most affordable healthcare begins in the kitchen.  I’ve been experimenting with a whole foods, plant-based diet since May of 2012, and I’ve spent every day since adapting a menu to fit that new lifestyle.  It’s tastier than you might think!  Learn with me as I explore healthy options on a budget with room for dessert!

Oh, and as for “The Hungry Tortoise”… the blog’s name stems from two notions:

  1. The love of good food
  2. The idea that a slow and steady approach wins most of life’s races

Transitioning into a healthier lifestyle isn’t something that happens overnight.  It takes time, and a lot of trial and error before finding out what works best.  Everyone is different.  It’s not about being perfect.  It’s about being consistent.  Spectacular results are sure to follow!

I read your story of your struggle with self-image, and then saw the photo of you on this page.
